Gluten Free Birthday Cake!

So tomorrow is my gran's birthday but we are all going out for a meal tonight. And you can't have a birthday without cake right?! But our problem is my mum has coeliac disease which basically means she is allergic to gluten and therefore flour.... making most if not all shop bought birthday cakes a no go. My gran also finds she isn't very tolerant of gluten containing produce and that it makes her feel quite poorly when she eats it.

However gluten free flour is readily available at the supermarket and I love baking (even if I am not perfect at it) so armed with some gluten free flour and the other ingredients needed I got baking!
Ingredients:
  • 265g gluten free self-raising flour
  • 265g butter or margarine
  • 265g caster sugar
  • Vanilla extract
  • 3 eggs
  • Vanilla butter cream icing
  • Mixed fruit Jam
Method:
Measure out all of your ingredients and then mix the sugar and butter with a wooden spoon until it forms a smooth texture. Next one by one add the eggs stirring them completely in as you add them. Next get a dessert size spoon and fold the the flour into the mixture gradually until completely mixed. Add a few drops of vanilla extract and stir in and then check the dropping consistency (add some water if needed at this point).


The correct dropping consistency would mean that as you raise a spoonful of mixture above the bowl and tilt the spoon, the mix will slide straight off and fall back into the bowl. Next pour the mixture into two lined sandwhich cake tins and bake at gas mark 6 for 18-20minutes until cooked through.


Allow to cool and then spread jam and icing in the middle and then decorate as you wish. I decided to use marshmallows and attempted a flower shape which I think has actually turned out ok!
