Butterfly Cupcakes from #SundayBakeDay

Ingredients makes 12 cupcakes

For the cakes:
110g butter
110g self raising flour
110g castor sugar
2 eggs
Vanilla extract

For the icing:
110g butter
220g superfine icing sugar
Dash of milk

Method:
First of all make the cakes and mix the sugar and butter today until smooth. Then gradually add the two eggs one at a time beating them in. Fold in the flour and finally add a few drops of vanilla extract and stir in. Spoon into 12 bun cases and place in a preheated oven at gas mark 5/6 for 10-12minutes or until golden brown and cooked through.

Whilst the cakes are cooling make your icing, beat the butter and icing sugar together carefully so the sugar doesn't overflow and then add a dash of milk and mix until smooth.

Take each cupcake and cut a cone shape out of the middle of the cake and cut this peice in half, spoon in some icing and replace the two halves back in the shape of wings.
