Eton Mess Cupcakes

Ingredients:
For the cupcakes-
110g Butter
110g Self raising flour
110g Castor sugar
Vanilla extract
2 eggs
For the icing-
220g Superfine icing sugar
110g Butter
Vanilla extract
Dash of milk
Pink food colouring
To decorate-
Dr Oetker Eton Mess strawberry peices

Method:
Pre heat your oven to gas mark 5.
First of all we will make the cupcakes so take you butter and sugar together until smooth then gradually add the eggs. Fold in the flour and finally add your vanilla extract and put your mixture into cupcake cases in the appropriate tray. Bake in the oven for 10-12minutes or until golden and cooked through.

For the icing mix your superfine icing sugar and butter (it will take a long time!) until smooth then add a dash of milk and some vanilla extract and mix in. Finally add your food colouring until it becomes the desired colour. Put the icing on each of your cooked cupcakes and top with the strawberry pieces and voila!
