Slimming World Lasagne Recipe

My favourite meal ever is Lasagne and so I thought I'd share my slimming world version, I only make a lasagne with one cheese sauce layer as a tasty, lower fat version. This recipe really helps me stay on plan as its so delicious, filling and in no way reminds me of diet food.

Ingredients
  • Extra lean mince
  • 1 red onion
  • 1 white onion
  • 1 carrot
  • Mushrooms
  • Sweetcorn
  • 1 tin of chopped tomato
  • 2tbsp of tomato puree
  • 250g Passatta
  • Lasagne sheets

For the cheese sauce
  • 1tbsp plain flour
  • 1tbsp margarine
  • 120ml semi skimmed milk
  • 1/2 pint of vegetable stock
  • 160g low fat cheddar grated

Method
Using low calorie cooking spray and a deep drying pan fry the onion and mince until browning off. Next add the mushrooms and carrot chopped into bite size pieces and two handfuls of sweetcorn and keep frying until mince is cooked. Next to go in is the tin of chopped tomatos and the tomato puree and passatta which you should keep on the heat and cook until all mixed/cooked.

Meanwhile put the margarine in a seperate saucepan to melt and then stir in the flour. Slowly add the milk, stirring constantly to avoid lumps, then slowly pour in the stock and stir. Next add about 130g of the cheese and stir in. Whilst on the heat stir until the sauce thickens (it will, just takes a little while)..

Layer the red sauce/mince mixture and lasagne sheets however you wish and then finally the white sauce on top. And sprinkle the remainder of the grated cheese on top.

Cover with tin foil and cook on gas mark 6 for around 45-50minutes removing the tin foil 20minutes before the end.
