Slimming World Friendly Chinese Fried Rice

This Chinese fried rice recipe is super easy and quick to follow and cook! And most importantly really tasty and for me it is important that it is slimming world friendly too. This is great as a main meal on its own or you could pair it up with something else as part of a meal or even a smaller portion as a snack.

Ingredients ~
  • 300g rice (white or brown)
  • 2 eggs
  • Low calorie cooking spray
  • 1 onion sliced and chopped
  • 250g chicken cut into bite size chunks
  • 6 mushrooms finely sliced
  • 110g frozen peas
  • 150g wafer thin ham sliced and chopped into small pieces
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce

Method ~

First of all put your rice on to boil and cook. Next take your two eggs and fry up an omelette using the cooking spray (once done cut into small strips and put to one side as you will ass this in again last). The next step is to fry up your onion and chicken until the chicken starts to brown off, at this point add in the mushrooms and stir for around two minutes. Then add in your frozen peas and ham and stir until peas are hot and soft (a few minutes) then add in the oyster sauce and soy sauce and stir. And finally ass the omelette and the rice and mix altogether and stir on the heat for a few minutes to ensure hot throughout. Next serve and enjoy!
