Slimming World Friendly Lasagne Recipe


Okay so I tweeked a slimming world recipe recently that I found and now I absolutely love it!!! It is the most amazing slimming world style recipe that I have tried. And I have tried a lot as Lasagne is my all time favourite food!!!

Ingredients: 
400g Lean mince beef
1 large onion
1 red pepper
4 garlic cloves
400g can of chopped tomatoes
500g passata
2 tsp dried mixed herbs
Lasagne sheets
500g Fat free natural yoghurt
200g fat free cottage cheese
2 eggs
Pinch of nutmeg
4 level tbsp parmesan cheese


Method:
*Preheat your oven to gas mark 6*
First up I would cut the onion and pepper up and fry with the mince and crushed garlic cloves in a low calorie cooking spray. Fry up until the meat is brown and then add the chopped tomatoes and the passata and stir in.
Next using mix together the fat free natural yoghurt, fat free cottage cheese, eggs, nutmeg and 2tbsp Parmesan in a bowl or just big enough to blend all ingredients together with a hand blender (or you could pop all in an actual blender) until smooth, this will now be used as your white sauce!!
Next get a dish like the one in my picture above and layer the red meat sauce mixture, lasagne sheets and the white sauce making sure that the final layer is a white sauce layer. Finally sprinkle over the remaining 2tbsp of Parmesan and then place in the over to bake. 
Depending on your oven I would say it will take 30-40 minutes to cook but ensure you check at 30 :-)
