Slimming World Style Sweet and Sour Chicken

I have been on my slimming world journey for a while now and I absolutely LOVE this sweet and sour chicken and noodle recipe so I thought I would share it with you! A healthy but amazingly naughty feeling meal.



This meal takes about 30mins to cook and the ingredients you will need are:
  • Dried egg noodles
  • Skinless chicken breast cut into bite size pieces
  • Low cal cooking spray
  • 1 red pepper and 1 yellow pepper cut into small pieces
  • 1 large onion cut into small pieces
  • 2 large carrots cut into small sticks
  • 227g can of pineapple pieces in natural juice
  • 200ml chicken stock
  • 4 tbsp light soy sauce
  • 1 tbsp white wine vinegar
  • 4 tbsp tomato puree
  • 2 garlic cloves grated (or garlic granules if easier)
  • 1/2 tsp of Chinese 5 spice
  • 1 tsp corn flour
~ Method ~

Put egg noodles into a saucepan to boil and stir as needed. Spray two large frying pans with low calorie cooking spray, in one add the chicken breast pieces and fry for 6-7minutes. In the other pan fry up the peppers, onion and carrots for 6-7minutes. Meanwhile mix the juice from the pineapple can wit he stock, soy sauce, white wine vinegar, tomato puree, garlic, Chinese 5 spice and the corn flour and then add to the vegetables pan. When the chicken is ready drain the excess juice and add just the chicken to the vegetables and sauce and cook for approximately 5 minutes or until sauce has thickened. Drain and serve the pasta and layer the sauce on top.
